Classic filet knife for precision work in the kitchen in Ultra High Carbon steel. Ideal for cutting small fish-bones, removing membranes and fat from meat or filleting fish. Comes with a knife rack in birch.

Product description

This classic fillet knife from Roselli has an eye for any precise work around the kitchen, such as cutting out bones and cutting off membranes and fat from a piece of meat. Filleting a fish with Roselli's fillet knife can be a pure pleasure. The way the knife slides through the fish and clears away any dull bones is really satisfying. 

The blade is made from UHC steel (Ultra High Carbon) and the handle is heat treated curly birch, coated with linseed oil – which ensure a firm grip, even when wet. Comes with a knife rack in birch, also with a linseed oil coating.

The UHC steel gives you an extremely sharp knife that keeps its sharpness for a very long time – keep in mind that the hard UHC steel is not suitable for penetrating bones or other hard materials.

  • Hunting & Carpenter knife!

    Both knives have character, one with a blade that is super sharp and "lives" just like the birch handle itself; here you can see the work of a blacksmith, the effort and the time, that's just great. As great as the new CPM steels are, a carbon blade with 60 HRC is simply better (I maintain all my knives anyway) and nothing happens with a bit of oil.

    The Carpenter is the best small bushcraft knife I ever had. Beautiful, comfortable, light as a feather, has a very good edge geometry and factory sharpness, and keeps that edge for a long-long time. And when it's time to strop, it takes no time to get that scary edge back. My other purchase was the Hunter. The handle is a bit too big for my hand, but I love the bladeshape very much. Our Environmental Impact

We are constantly exploring new ways to minimize the impact of our business operations on the environment. In addition to our long-term sustainability goals, we choose local natural materials to minimize transport and a transport partner whose electrified road transport is increasing all the time. Our solar cells give us a good renewable alternative for our heating and electricity consumption.
