Roselli knife being sharpened

What is the most important thing about a knife?

We won’t keep you waiting for the answer—it’s quite simple. The most important feature of a knife or axe is that it is razor-sharp and maintains a high level of sharpness. A sharp knife or axe provides better control and reduces slipping while in use, making your tasks safer and more efficient.

A dull knife or axe can be dangerous and cumbersome, as it requires more force to use. However, when properly sharpened, it allows you to complete your work more smoothly and effortlessly. Your Roselli knife or axe is made from high-quality carbon steel, ensuring excellent sharpness. However, like all knives, it requires regular sharpening over time to maintain its edge.

How Do I Sharpen My Knife or Axe?

To ensure that your knife or axe stays sharp, you can use one of two methods: sharpening or honing. You can find more details on how to do this in our Care & Repair Guide or on our YouTube channel.

The sharpening tool you need depends on the hardness of the steel. When sharpening a Roselli knife or axe from our carbon steel collection, we recommend using a phyllite sharpening stone. We offer both round sharpening stones for axes and narrower stones designed for knives.

These sharpening stones work for all our products but are less effective for sharpening our Ultra High Carbon (UHC) Steel knives and axes. For UHC steel, we recommend using our double-sided diamond sharpener for the best results.
