In the video, Roselli's diamond sharpener is being used. This sharpening stone works well for both Roselli's carbon steel knives and UHC (Ultra High Carbon) steel knives. When using the diamond sharpener, place the knife at the far end of the diamond sharpeners edge according to the video's recommendations, and then make gentle, circular movements.

When it comes to Roselli's sharpening stone, you should keep in mind that the stone is not as effective for our harder UHC steel knives as the sharpening stone is better suited for rough and fine grinding.
